Chicken & Cream Cheese Stuffed Peppers

Bell Peppers
(any color)

Shredded Chicken Breast
(cooked)

Cream Cheese
(softened)

Monterey Cheddar Cheese

Diced Green Chilis

Instructions
Cook Chicken breast in water- remove & shred.
In a large bowl: combine chicken, cream cheese, 1/2 the shredded cheeses, green chilis, cumin, salt, pepper, & salsa. Mix well.
Slice the bell peppers in half (top to bottom), cut out stem, remove seeds & veins.
Stuff peppers with chicken mixture & sprinkle with the remaining cheese.
Bake in a greased baking dish for 25-30 minutes at 350 degrees (until peppers are tender and filling is heated through)
