  1. Preheat oven to 375° & grease a 9 x 13 baking dish. Remove the giblet bag from the chicken cavity & set aside for later baking or discard.
  2. Place completely thawed chicken in baking dish. Rub down with melted butter, 3/4 of Jane's Italian seasoning packet, salt, & pepper. Cover with foil and bake for 30 minutes. Meanwhile, prepare vegetables.
  3. Remove chicken from oven & arrange potatoes, onions, & giblets (if desired) around the chicken. Sprinkle vegetables with remaining seasoning packet & garlic. Drizzle olive oil & broth over vegetables.
  4. Place in oven and bake an additional 25 minutes uncovered.
  5. Remove from oven & add in fresh mushrooms. Increase oven to 400° & bake for an additional 10-15 minutes & until an internal temperature of 165°is reached.
  6. Sprinkle entire dish with parsley. Serve & enjoy!
